The existing archives do. If you visit https://lists.gnu.org/archive/html/lilypond-user/2023-02/msg00505.html and click "reply by email to Werner LEMBERG”, a new email is opened in your favorite mail client, with your email in the To: field. However, the addresses are indeed replaced by "address@hidden" when they appear in the body of the message, which I suppose is to prevent simple Web scrapers from gulping them.
