BTW: Which organ patch are you referring to? You wouldn't happen to have one with realtime rotary speaker simulation without driving-in-chewing-gum-latency, would you?

All I need to do now is pitch bend, and keyboard playability should be
"complete" (unless I'm missing something?)

Did you think about the various legato modes (for instance highest note sounding)? How was it, you didn't wanna put portamento in the midi_in node, or...?
