On/Off work well when there are just two possible states,
but here we have the default, bracket and parenthesis
states, so I don't like them here.

I take Mat's point about the lack of need for a dedicated
command to return to the default state, and would be happy
to use \arpeggioNeutral (or \..Up/Down) to return to the 
default state and required direction, as long as it is 
documented.  It might never be needed :)
