I actually saw that and tried to try it out, but I kind of glossed over that what was being modified was the behavior of < instead of the text-based commands. I was using those lines with \cresc.

It works like this too:

\version "2.24.0"

{
  \once \set crescendoText = "molto cresc."
  c'1\cresc c' c'\!
}
