Well that's nice and all, but how can I be sure that Pan only uses my
preferred server for posting*?

I think we use multiple servers for completely different things.
For example, take a gander at the headers of this message. On my end this
was not posted to a mailing list. It was posted to a *newsgroup*.
This is the only sever on the planet that "carries" this newsgroup.
*Anyway, as I stated in my previous post (which I guess you overlooked),
I've figured this out now. One makes extensive use of posting profiles.
