Follow-up Comment #3, bug #31117 (project octave):
Since your font is currently "*", gnuplot will select a default font. For me
that doesn't turn out well.
Before creating your plot, change the default font.
set (0, "defaultaxesfontname", "Helvetica")
set (0, "defaulttextfontname", "Helvetica")
This may not look correct for X11, but will work for PS or PDF output.
Finally, please try postscript or pdf output.
print -dpdf printed.pdf
print -dpsc printed.ps
If the results look correct, try selecting a fontname that works with X11.
