Follow-up Comment #1, bug #31117 (project octave):
I don't see this with the developer's sources.
It is possible that gnuplot is having trouble selecting the proper font.
Does the problem persist if the figure is printed to a printer?
What is the fontname being used?
get (0, "defaultaxesfontname")
