Ok , mais juste un ou 2 petits tests :
1° supprime les fichiers que tu as liés / copiés dans /etc/apache2/mods-enabled
2° fait à la place
cd /etc/apache2/mods-available
a2enmod php8.1.conf
3° en commande en ligne , que donne
php -m
et
/usr/sbin/apachectl -D
DUMP_MODULES
On va règler ça easy peasy :)

Je ne veux pas t'emmerder avec ça.
C'est hors sujet Noalyss.J'attendais donc qu'une autre personne réagisse sur la liste.
J'ai déjà épluché la documentation.
Tout purgé tout réinstallé.
Des traces de php7 reste ci et là mais c'est bien désinstallé.Et, comme je disais, «J'ai ajouté les "php8.1.conf" et "php8.1.load" dans "/etc/apache2/mods-enabled" (liens depuis "/etc/apache2/mods-available). Cette étape fait planter Apache». C'était suggéré quelque part.

Il ressort que tu doives reinstaller la partie php . Donc on va vérifier ta config.
Pourrais-tu me donner la sortie de
dpkg -l |grep php
?
