Chris,
The goal being to improve privacy which I would guess is one of Mediagoblins
goals. PDF's contain what seems like too much meta data, details about a
users computer, settings etc that could probably make them more susceptible
to hacking, identity theft etc.

Hello!
There is no such feature yet... a plugin could possibly be written though to
provide such an option to the user.
Out of curiosity, is this related to wanting to strip identifying
information out?
More permanent changes to the uploader will probably come with implementing
multi-upload support (yes, long waited though...).
