Which software setup is to be used, on which version of OS X? 

I run 10.8.3 with Xcode 4.4.1, can create specific partitions for other versions if needed.

Is a list of the trackers with MacOSx in their label.

Also I assume you have read the contributor's guide here:

The list contains many people with different skills that can help with the various aspects (I for instance cannot program, but can help with managing any patches you want to submit for reveiw/testing etc.).
