Which part of gui use which font ?

Hi,

 I try to fine-tune the GNUstep in Chinese environment
 and would like to know precisely which part of gui use which font.
 Is there any document for that ?
 For example:
 The title of menu (in the black bar) use NSBoldFont instead NSMenuFont.
 The application name in Info Panel use NSBoldFont instead 
NSControlContentFont.
 I have no idea whether they are correct or not.
 Any specification would help.
