You do not "hide the staff lines", you end the staff. There is nothing
left for putting things above or below afterwards.
Try
\override Staff.StaffSymbol.line-count = #0
instead of \stopStaff . It might make sense to put it in a \with block
for the Staff since then it won't be ignored when grace notes are
present in a parallel context.
