It would be very nice if it would be easily possible to transpose(? not sure this is the correct English word) the score should we get a different vocalist at some time in the future..

Yes, you could assign a color to each note, but I think I'm a little confused about your image you attached. Did you want actual notes on a staff, or a more "graphic" approach of strips of color? One is much easier than the other in LilyPond.
