I'm not a Linux but a FreeBSD user ;), anyway, two tools
not yet mentioned so far:
.. kermit, *the* classic terminal emulation; can also
write a session logfile
.. conserver, can have a server running on the TTY all the
time, with one or multiple clients connecting to it; data
can also be logged while no client is connected at all
