1) Check out the extremely long RCgroups paparazzi thread. Somebody posted a slow-stick airframe file, almost exactly like what you describe.

2) No experience with this.

3) As far as I understand it, nearly every ESC takes a PWM command to control throttle, which is identical to servo control. No need to change anything.
