Do you mean instead of the example with three DVDs ?
./merge_debian_isos xorriso-dd-target-plug-test \
merge_mount/iso \
debian-11.2.0-amd64-DVD-[123].iso
If so, then download the 12 DVD images and do
./merge_debian_isos xorriso-dd-target-plug-test \
merge_mount/iso \
debian-8.11.1-armel-DVD-[1-9].iso \
debian-8.11.1-armel-DVD-1[0-2].iso
The shell parser will expand the wildcards to a list of 12 file names.
(Alternatively you could give all twelve file names explicitely.)
