Yep, that's what the USE_INSECURE_SANDBOX_PASSWORDS environment variable is for. You can set it directly in your modified setup-sandcastle.sh or in an overrides/ file for your deployment.
Where are these overrides are documented? From the code I guess that this has to go into a file "./overrides/demo". Right?
