I was having similar problems with slow servo response using Spektrum equipment and the PPM encoder. I was powering everything (Rx, Encoder, and servos) all form the autopilot (Tiny 2.11).

I then redid the wiring  as shown in the diagram in the link below, with the servos and Rx powered independently.

After that it worked much better. There is still a slight delay (half second or less), but I was able to fly my Easystar just fine. Hopefully this works for you.
