Even the highest gain antennas of 18dB or so have around a 15 degree field of view, which will cover 0-500m altitudes at a distance of 2km.  A 24dB antenna will have half the beam width but would certainly be used for longer distances anyway.

If you're looking for a practical solution, it's far easier to eliminate the complicated pitch axis mechanism and accelerometer feedback loop and simply use a cheap 2-axis magneto to point the antenna toward the plane with a simple 1-axis mechanism.  You could also combine the single axis high-gain antenna with an upward facing c-pol low gain antenna and a diversity receiver to have optimal coverage in nearly all conditions.

But maybe not as interesting :)
