Oh, you should be able to use the following to make the axis text visible:
t = 0:0.01:12;
plot (t, sin (t));
legend ('$\sin(t)$');
set(gcf, 'color', 'none')
set(gca, 'color', 'none')
print ('plot.eps','-depslatexstandalone','-S400,240');
