I think what Kevin suggested is the right approach.  I've always had
my mail delivered (via procmail) to multiple maildrops (originally
mbox-style, now maildir).

When I'm ready to read mail, I use inc, or, more usually, a wrapper
that does a sequence of incs from all the maildrops into the
corresponding MH folders.  The only thing that ever writes to my MH
folders is inc, and that's always driven by me.
