What version of nmh are you using?  Here's what the nmh 1.5
man page says:

  Prior to sending the message, the "Date: now" field will
  be appended to the headers in the message.

With nmh 1.5, From: must be set in the draft.  See the
NOTABLE CHANGES section of the NEWS file.
