Plzip only shows the compression progress for multimember files, as documented in http://www.nongnu.org/lzip/manual/plzip_manual.html#Invoking-plzip

"Two or more '-v' options show the progress of (de)compression, except for single-member files."

Most probably you tried files too small for the compression level selected. See http://www.nongnu.org/lzip/manual/plzip_manual.html#Minimum-file-sizes
