cvs -z3 -d:pserver:address@hidden:/sources/lwip checkout lwip
as I recently did exactly this to create the 1.1.1 release:
cvs -z3 -d:pserver:address@hidden:/sources/lwip checkout -r
STABLE-1_1_1 -d lwip-1.1.1 lwip
