Since you put the Span_arpeggio_engraver in the Staff context, you
have to specify it when entering your \override; otherwise LilyPond
doesn't know how to handle it.
For instance,
\override Staff.Arpeggio #'extra-offset = #'(2.2 . 0.0 )
does the trick.
