Deux remarques :

1) L'utilisation de \ottava devrait réduire quelque peu l'espacement vertical: http://www.lilypond.org/doc/v2.16/Documentation/notation/displaying-pitches.fr.html#ottava-brackets

2) global-staff-size à 17 semble fonctionner mais pas dans le bloc paper :
