Okay, I now have a fully functioning jail. However, what I really want
to achieve is to lock the user in his home directory so he can't see the
other users and system files in the jail. Is this possible, if not with
Jailkit is there another way?

with a jail you loch the user in a jail, so you have to make a jail per user if you want to do that.

I suppose I could create a different jail for each user, that would stop
them seeing each others directories, but they could still see the system

no real system files, only the sftp binary and its libraries, nothing from the real system.
