What you describe is basically the manual of Octave
http://www.gnu.org/software/octave/doc/interpreter/

I thought you were aiming at sometihng more hands-on.

I think it is better to make a tutorial project, i.e. an engaging task
for the students/reader and provide the "theoretical" stuff as it is
needed.
