This is a known issue when using graphics_toolkit fltk (the default in
3.8.1).
You can switch to gnuplot:
octave:1> graphics_toolkit gnuplot
octave:2> text (0.5, 0.5, "R_1")
octave:3> print ("out.pdf")
Or use the FLTK toolkit and latex to render the text. See here for an
example with LaTeX: http://wiki.octave.org/Printing_with_FLTK
