You'll need to find a new gnuplot app for Lion. You can use one of the popular 
package managers ...

(1) FInk

(2) MacPorts

        http://www.macports.org/

(3) Homebrew

        http://mxcl.github.com/homebrew/

Or you can build and install yourself
