You can create square plots using gset:

octave:1> gset size square

or plots with any given aspect ratio:

octave:2> gset size ratio 0.5

The axis ranges can be set similarly:

octave:3> gset xrange [-1:1]


Have a look at the 'set' documentation in gnuplot for other options that
can be passed using gset in Octave
