Basically you need to `set parametric' for Gnuplot.  Check out this example:

octave> u=(-5:0.01:5)';
octave> helix=[cos(u),sin(u),u]; 
octave> gset parametric; 
octave> gsplot helix

See `Three-Dimensional Plotting' in the Octave manual or `help
splot parametric' in Gnuplot.
