I use best email client for Emacs, which is Mutt https://www.mutt.org,
setting is the one below:

set attribution="* %n <%a> [%(%Y-%m-%d %H:%M)]:"

I have removed language related words such as "Emanuel wrote: " as I
answer in various languages. I could inject a filter to first
recognize the language and then to decide which language to use for
that.
