I have no experience with Fastmail, but my last 3 employers have used
microsoft's email service, and setting Gnus up to work with it has been
pretty painless. The hardest thing is to be disciplined, get a minimal
working configuration first, then play around if you want. Expect to
learn a lot.

Note that when I want to do big experiments with Gnus, I use an entirely
different user account and I do not experiment with my work email. Gmail
is fine...

I found a reference to this page in my gnus.el, which I recall was
really helpful:

I don't know why I didn't use the emacswiki gnustutorial, since these
articles are similar.
