On OS X C-c locks system: workaround?

I am a long time GNU/Linux user, and was using GNU Emacs (then Demacs) even
before, on WIndows 3.0, along with the amazing GNU Unix tool work-betters
compiled for Windows. After trying GNU/Linux, I never turned back, and I
never even considered an Apple, for many reasons.

For the sake of my new teaching job, at a school where much of the work
involves using Mac OS X computers, I have turned to the dark side. I am
just not good enough to juggle operating systems when faced with this work
load. I need to use Emacs, though, especially for Org-mode and editing
LaTeX, and a plethora of other work streams. However, on both the laptop I
have been given by the school, and my own new iMac, I have found myself
face with a serious quandry: \C-c locks emacs up. Or is it \C-cc? I have
found little or no information about this awful deficit, except rather
amazing statement that emacs keybindings are available throughout the OS X
system, except they are not used to Emacs! Wow!

Can someone point the way to any useful information about this issue?

I am heartsick about leaving GNU/Linux mostly behind, even while I am
stoked that I have a job. On the other hand, OS X is an amazing operating
system. I am a bit confused about how to install Emacs, all the same.

Isn't it strange that OS X has emacs installed natively, while no GNU/Linux
distro of dozens I have tried do. Another life lesson.

Thank you for any pointers,

Alan Davis
