I don't see the difference between the two lines:
> (local-set-key (kbd "é") (lambda()(interactive)(insert "e acute")))
> (local-set-key (kbd "é") (lambda()(interactive)(insert "e acute")))

(local-set-key (kbd "é") (lambda()(interactive)(insert "e acute")))
Type: C-x C-e C-x 8 ' e

M-x eval-last-sexp RET C-x 8 ' e
