C-h k, then choose existing menu item. Shows something like this:
<menu-bar> <files> <open-file> runs the command find-file
So it's the item <open-file> in the menu <menu-bar> <files>. To
define another item in that menu:
(global-set-key (kbd "<menu-bar> <files> <frob>") 'frobnicate)
