 You can translate terms directly from the tryton frontend. Try :

Administration -> Localization -> Translations

There you can check the translations for all the terms, and for specific modules. You can check it and change it right there.

Also, where can I change the date format from American (mm/dd/yyyy) to
European (dd/mm/yyy)? Obviously, the system GNU Health is running on, is
doing it already in the correct format...

You can change the date format also in the localization menu, but in Languages

Administration -> Localization -> Languages 

Check the language you want to check and switch to the Form view. You will see a separator string "Date Formatting" and the field "Date". You can enter there the format "%d/%m/%Y"
