This situation seems rather clear :) You either find a way to use gtk
2.10, or do without printing :)

For compiling GTK on your system, there are lots of options, from
garnome to jhbuild to finding the right people to make debian packages,
etc. (Who knows, maybe rebuilding ubuntu's packages will work for you.)

But if you want printing with guile-gnome on stock debian, I'm afraid
you'll have to wait for etch+1.

ps. There is some printing stuff in libgnomeprint, but that was replaced
by the gtk print code, and I won't be wrapping it. But wrapping it
yourself would be another option.
