I see. I think I had:
model = 6310i
connection = serial
port = /dev/rfcomm0

The problem is definately in the phone, since just opening the device with 
a terminal emulator (eg minicom) resets the phone immediately.

Strange - the only problems I had where delays when using the DLR-3P 
cable, because I was using a USB<->Serial adapter. When I used a native 
serial port, it was notably faster, but still waaaay slower than 
bluetooth :) It did _not_ however crash or reset the phone at any time. 
Maybe there is something other to blame?

My configuration was:
model = 6310i
connection = dlr3p
port = /dev/ttyUSB0
