For FluidSynth's part - not at all. Well, unless you run totally out of memory, but then FluidSynth would complain loudly, and most likely quit with an error.
However, there are more parts in a system - most importantly, how the OS reacts to getting low on memory, but also JACK/ALSA/DirectSound, Jorgan, and so on. Those are the things that makes the question beyond my knowledge and complex to answer.
