If you have a pretty recent org-ref, You can set a list of functions for
org-ref-clean-bibtex-entry:
https://github.com/jkitchin/org-ref/blob/master/org-ref.el#L302
Use this in an init file, and remove the functions you don't want to
run.

'(orcb-key-comma
orcb-key
orcb-&
orcb-clean-doi
orcb-clean-year

org-ref-sort-bibtex-entry
org-ref-title-case-article
