In my example
C-x C-f new.txt <ENT>
C-h v buffer-file-coding-system <RET>
buffer-file-coding-system is a variable defined in `C source code'.
Its value is raw-text-unix
Local in buffer new.txt; global value is iso-latin-1-dos
