I wouldn't use NS* for games. I have done lots of animations of NSViews but without CG and CA it's not a nice experience.
I also had to patch NSViewAnimation source code to have it redraw the view at every animation step because this is not done by default (?).

Some nice functions like rotate around center etc is missing.

If we only had CG+CA... (If I knew how I would implement it)

There is oolite: http://www.oolite.org/
but this one uses SDL instead of -gui.
