Gorm is designed from the ground up for creating gmodel elements. I
don't think reimplementing it to create Renaissance gsmarkups would be
a trivial feat, nor would bereimplementing its interface to use either
gsmarkup or NIBs so as to run natively in OS X. Not to mention, of
course, that such would effectively require a forking of Gorm.
I think Renaissance has, as one of its stated goals, the creation of a
native-to-Renaissance and truly cross-platform interface editor, and
forking and modifying Gorm to do such a task would be a disservice to
both the Gorm project and Renaissance.

Or run Gorm under OSX - easily done if you recoded thosebits of Gorm
which use gmodel or gorm files too use gsmarkup ones.
