Er...
the names of those have been changed in the newer gnustep-base, while the
release you are using of gnustep-gui is slightly older than that.
As a quick fix - just edit manually the gui/Source/GSFontInfo.m file,
replacing
NSArabicStringEncoding with NSISOArabicStringEncoding,
NSGreekStringEncoding with NSISOGreekStringEncoding,
NSHebrewStringEncoding with NSISOHebrewStringEncoding.
That should work.
Or - just download a newer snapshot of gnustep-gui and try with it.
