Joe's score seems to cover all the bases, but may be a bit daunting.
For your specific question here: Denemo plays back the note that you
enter using the instrument of the staff you enter it in (i.e. where the
cursor is when you insert the note). The pitch is one of the (built-in) 
staff properties, and the most direct way to alter it is via the built-
in staff properties which you can access by clicking on the "Part Name"
that appears on a green background immediately above the initial clef
in the first bar.
(The relevant command is also in the menu system - 

Command: Built-in Staff Properties
Change the built-in properties of the current staff
Location: Object Menu ▶ Staffs/Voices ▶ Staff Properties
Internal Name: StaffProperties

Where you will find a TAB labelled MIDI which allows you to choose the
pitch, instrument etc)
