I'm afraid you have hit up against Gtk's theme thing. The colors of
things are generally themed, which means that a theme can choose to make
anything illegible. The idea is that all applications are the simple
sort of GUIs that come with Gnome the user can choose a theme for them
all. The worst case is the theme that comes with my Distro which has
decided that a Frame should have an invisible frame around it. This is
apparently because they thought putting frames round things wasn't a
good idea. The Score Layout window and the new Inspector and Editor
windows are degraded in consequence.
You may be able to choose a different theme and/or customize the one you
have - you will be best asking on a distro-related mailing list for
advice how to do that. If you find out something that works please post
this list with your solution.

No. Please submit a bug report, because I don't think this issue will go
away - the people developing Gtk don't have a very broad view of what it
can be used for. (Another rant: they have decided that tear-off menus
are deprecated. Why? "Because menus are not supposed to be torn off".
Fine for some trifling application with half a dozen menus, but when you
have finally got down three or four levels and found the menu you want
to use for the next 10 mins you don't want to be told that.)

The Command Center. Launch it by right clicking on the menu item and
choosing Open Command Center. Then you will already be on the command
you want.

Version 2.0.0 is out and is enormously improved.
