None of those under /gnu/store.  /gnu/store is explicitly read-only.
The actual source code you’d edit is a checkout of Guix.  See
<https://www.gnu.org/software/guix/manual/en/html_node/Building-from-Git.html>.

In Scheme?  You could use ‘scandir’:

and also ‘lstat’, etc., but that’s not quite a “shell”.
