Really?  I've been leaving them off, too.  Especially because of this funny 
comment in the upstream ghostscript:

{
...
    /*
     * Acrobat Distiller sets CreationDate and ModDate to the current

... proceed to set CreationDate and ModDate to the current time.
    }
}

That would look like this:
